Worldwide known - Risotto

Risotto is one of the classic Italian dishes, along with pizza, pasta and ravioli. Risotto is very variable and can therefore be cooked with different components depending on your own taste. If you want to prepare a flexitarian risotto, you can not use the classic long grain rice (basmati or jasmine rice), but you can use a round grain rice like arborio to make the risotto nice and creamy. Important for the success of a really good risotto is a well-seasoned broth with which you pour the risotto. We recommend using a good vegetable broth, this is quickly prepared and can also be frozen away in small parts.


Ingredients

  • 1 shallot

  • 1 clove of garlic

  • 150g risotto rice (arborio)

  • 1 tablespoon olive oil

  • 30g Parmesan cheese (finely grated)

  • 60ml white wine

  • Half liter of vegetable broth

  • 125g mushrooms of your choice (mushrooms, chanterelles, porcini, beech mushrooms)

  • Some chopped herbs for example parsley

  • Half tablespoon of butter

  • Lemon juice of half a lemon and zest

  • Some arugula

Instructions

Heat the vegetable broth and season well. Also some rosemary, garlic and thyme can be added to the broth, if available. Next, peel the shallot and garlic and cut into fine brunoise. Then sauté them in olive oil until translucent.

Add the risotto rice and roast briefly, deglaze with white wine and now pour the first ladle of warm vegetable broth on the risotto. Repeat this process until the rice has absorbed all the liquid.

IMPORTANT--> Stand next to the risotto and stir so that it does not burn.

In the meantime, clean and chop the mushrooms. Then fry them in a pan with a little oil and season with salt pepper. Add them just before the end of the risotto. The risotto is ready after about twenty minutes (decide for yourself how firm you want your risotto).

Last but not least, stir some butter into the risotto and add some fresh lemon juice to round off the dish.

Risotto is super creamy and awesome in taste. For those who like cheese, definitely try it. Also versatile to combine, as a side dish or even as a main course. If you like to cook Italian cuisine, you should definitely recreate a risotto at home.
